Can this notify people automatically?
No - it collects the list, and you send the email. That's usually fine: a restock email written by a person, mentioning the exact variant, converts far better than an automated one.
Should I ask for a phone number?
Offer it as optional and ask which they prefer. For high-demand items a text beats an email, because it arrives before the stock sells out again.
Can I close sign-ups when I have enough?

Can I email everyone who signed up?
